The Wolfpack and more cranberries!!

Mr. S and I have a breakfast place we frequent called Over Easy. It was actually on that food network show Diners, Drive-ins and Dives with that disgusting guy that eats way to much. Anyway, it is absolutely delicious and it is the place to be seen on Satuday morning...I think that is why we like it..Their speciality is called the Wolfpack and it consists of two eggs any way you want, choice of cheese, spinach for Mr. S and I - meat eaters have bacon - all between two layers of hashbrowns. Amazing, right? Instead of waiting two hours for this treat, we decided to make our own this Sunday. While it wasn't as huge as the Over Easy wolfpack, I would say it was as good. Here is a picture!
I also decided to make oatmeal cranberry cookies today in the never ending quest to use the cranberries. A friend of ours was saying how his favorite cookie is plain old oatmeal with cranberries and he had some, but left them at work. I didn't want him to go with out so I wrapped them up in a shoe box as a surprise. There is a picture down below. I must say they turned out great. The perfect combination of sweet and cakey. As you can see, Mr. S. enjoyed them too. When I was wrapping them up to take to our friend, he said, "are you really giving them all of those?"



How To:

Ingredients
3/4 cup butter
3/4 cup brown sugar
2 eggs
1 1/2 cup flour
1 1/2 cup oats
1 teaspoon baking soda
pinch of salt
2 cups fresh cranberries chopped in a food processor

Preheat oven to 375.

1. Beat together room temperature butter with the sugar until creamy. I once read you should do this atleast one full minute to let lots of air into the fat. This helps the texture.
2. Add the eggs and continue to beat.
3. Add all the dry ingredients and stir with a spatula until combined.
4. Add the cranberries.
5. Drop by the loaded teaspoonfull onto a baking sheet and bake for 10 minutes.
