Moosewood Muffins-cranberry apple style.

Mr. S is a serious impulse buyer. The man once bought 72 forever stamps. His latest purchase...a 3 pound bag of fresh cranberries from The Costco.


Expect more cranberry creations to come but here is the first. MUFFINS! Here they are fresh from the oven.


And one waiting to be eaten.


Mr. S., I hope these cranberries are as good as you were expecting.

Moosewood Muffins How to:

Ingredients
Streusel:
1/3 cup flour
1 1/2 tablespoon cold butter
1 1/2 tablespoons brown sugar
1/4 teaspoon ground cinnamon
pinch of nutmeg
pinch of salt

Wet Ingredients:
6 tablespoons butter at room temp.
3/4 cup sugar
1/2 cup plus 2 tablespoons milk, I used soy.
1/2 teaspoon vanilla
1 apple peeled and cored
1/2 cup FRESH cranberries that will make only a small dent in your 3 lbs. bag :)

Dry ingredients:
2 cups flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon cinnamon

1. Preheat oven to 350 and prepare muffin tins.

2. Mix together struesel topping ingredients in food processor. Much, much easier than the suggested mixing with a fork. Set aside.

3. Cream together butter and sugar. Beat in the egg, then milk and vanilla. In food processor, chop apple and cranberries. Fold into wet ingredients with a spatula.

4. Add the dry ingredients and mix with the spatula.

5. Spoon about 1/3 cup of batter into each muffin cup. Dust with struesel topping.

6. Bake 25 minutes.
