Mine-stormy?

Sorry, terrible pun on tonight's dinner. But we did have Minestrone and it is stormy so who could resist?



Minestrone is a real empty the pantry kind of meal. Ours had white beans, carrots, sun-dried, tomatoes, spinach, celery, onion, and garlic. LOTS of garlic. On the side we had chedder thyme biscotti that I really wanted to be a surprise for Mr. S. but he INSISTED that I tell him what they were. I think he might have even googled the ingredients to try and figure out what I was making. Even though the surprise was ruined, they were still absolutely delicious.

Cheddar Thyme Biscotti from Moosewood restaurant New Classics
1/2 cup butter melted
3 eggs
2 Tbsp garlic
1/2 cup shredded cheddar cheese
1 tsp. thyme
2 cups flour
1 1/2 tsp. baking powder
1/2 tsp. salt

Preheat oven to 350. Lightly oil a baking sheet. Whisk together eggs and melted butter. Mix in the thyme, garlic, and cheddar cheese. Mix the dry ingredients right into the wet; I used my fingers for this step. Mold the dough into a 12 inch by 3 inch log. Flatten the log until it is about 14 inches by 4 inches and bake for 30 minutes. Remove from oven and place on cutting board. When cool enough to handle cut into 1 inch diagonal pieces. Arrange on cookie sheet and bake for 5 minutes more on each side.
