Easy dinner and Miss Mum

This dinner was in the January or February veggie times. It was so easy!

Vegetables Korma
1/2 small white onion
1 can tomatoes, drained.
shake or two powdered ginger
olive oil
1/2 tsp. garam masala
1/4 tsp. plus 1/8 tsp. cardamom
1 bag mixed frozen veggies - ours had cauliflower, peas, broccoli, carrots, etc.
1 can chickpeas
3 Tbsp. coconut milk

Puree onion, tomatoes, and ginger in blender to make a paste. Heat oil in a skillet on medium heat. Add garam masala and cardamom and cook one minute stirring constantly. Add tomato mixture and simmer until it thickens. Stir in vegetables, chickpeas, and coconut milk. Cook until vegetables are heated through. Serve with rice.



Here is The Girl sleeping with her dad after school. Mr. S. will sleep through EVERYTHING but when he hears that girl crying in the night he is out of bed in a flash...


And here she is in her new sweater. A gift from my mentor teacher. Isn't she pretty in pink???
